16 oz low-fat
cottage cheese
1 cup canned kernel corn
6 oz cheddar cheese; shredded, reduced fat
1/4 cup sliced green onions
2 Tbs chopped fresh cilantro
1/4 tsp mexican seasoning
6 flour tortillas; 6 inch in diameter
1/2 cup salsa
Pre-heat oven
to 350 and grease a 9 x 13 inch baking dish. Mix first 6 ingredients
but reserve 1/2 cup cheddar cheese. Spoon about 1/2 cup of mixture
down center of each tortilla. Roll and arrange seam side down in
the baking dish. Top with salsa and remaining 1/2 cup cheddar cheese.
Bake at 350
for 30 minutes.
